    Also - - why would it be "all'y'all" instead of "all y'all"?
It is a contraction of "all of you all," and it's being used (quite emphatically) in the speaker's mind as a single word.

    Or were you joking? I can't tell --;
I have a very dry wit (shaken, not stirred), and I don't mind being misunderstood. So if you find something funny you may feel free to assume I am joking, even if I'm not.

(I am also sometimes guilty of leaving out or adding punctuation to alter the emotional impact or clarity of my words.) :-P

y'all - you (plural*)
all'y'all - you (plural) and everyone in your (highly contextual) category or other larger grouping

* It may sometimes appear that "y'all" is being directed at a single person. This is not so. Rather, the speaker is warmly including others who may not be immediately present, such as loved ones, peers, or the people outside waiting in your car.
